I am not sure wonder if someone could help me - are all LED lights dimmable?

No, not all LED lights are dimmable.

Firstly the driver on the lights must be dimmable.

Also, even if it is, you need to have the right type of dimmer.

Note also this applies to LED globes - some are dimable and some are not.
